Grilled Lemon Herb Chicken with Mediterranean Quinoa Salad
This isn’t your average grilled chicken situation. It’s light, juicy, flavorful, and pairs perfectly with a chilled quinoa salad that’s basically a Greek vacation in a bowl.
Lemon Herb Grilled Chicken
Ingredients:
- 2 lbs. boneless chicken breasts or thighs
- 3 tbsp olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 1 tbsp chopped oregano
- 1 tsp thyme
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Instructions:
- Mix olive oil, lemon juice, garlic, and herbs.
- Pour over chicken and marinate for at least 30 minutes (up to 4 hours for max flavor).
- Grill 6-8 minutes per side over medium heat or until cooked through.
- Rest before slicing. Try not to drool on it.
Mediterranean Quinoa Salad
Ingredients:
- 1 cup uncooked quinoa
- 2 cups veggie broth or water
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 1/2 red onion, finely diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta (optional)
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions:
- Cook quinoa, then let it cool like a chill summer breeze.
- Mix all the other ingredients together in a big bowl.
- Add the quinoa and toss to combine. Taste, adjust seasoning, and serve cold.
Pro Tip: Double the recipe and thank yourself later when all of a sudden everybody wants a bowl!
